Peanut Butter Miso Mousse
1/2 cup peanut butter
1/3 cup agave or maple syrup
1 tablespoon miso (if you’re really into miso you could add two tablespoons)
splash of vanilla
250ml whippable vegan double cream
50g chocolate of choice
handful of salted roasted peanuts
In a medium bowl mix together peanut butter, agave, vanilla extract, and miso. Stir to combine.
I’m a separate bowl add all the vegan cream. Using a hand whisk, whisk till you have soft peaks. You could also use a stand mixer if you have one.
Chop chocolate and peanuts and set aside.
Finally fold in whipped cream with the peanut butter mixture a third at a time till completely combine. Be gentle as folding.
Layer mousse and chocolate/peanuts between four glasses. Allow to chill for at least 4 hours before serving.
