Vegan Jerk Chicken & Plantain Tray Bake





Jerk Marinade:

3 Tablespoon Of Olive Oil

1 Tablespoon Jerk Marinade

1/2 Tablespoon Maple Syrup

2 Tablespoons Soy Sauce

1/2 Teaspoon Allspice

1/4 Teaspoon Cinnamon

Salt and Pepper to taste

2 Spring Onion

One Red pepper

165g Vegan Chicken

Two Ripe Plantain

Half a Red Onion

Dressing:

3 Tablespoons Coconut Yogurt

1/2 Lime

1 Clove of Garlic minced

Mint Leaves Torn

Salt and Pepper To Taste

Preheat Oven to 190c.

Chopp Veggies to the same size. Place on a lined baking tray. In a small bowl mix all ingredients for jerk marinade. Coat the veggie & vegan chicken in the marinade. Bake for 25 minutes.


As it bakes, mix all ingredients for dressing together. Serve the Tray Bake with sides of your choice and enjoy!
