Plantain & Tofu Scramble Breakfast Tacos




Serves - 2


4 Taco Shells

1 Plantain

1 Block or 300g Of Silken Tofu

Olive Oil

1 Spring Onions

Tofu Scramble Seasoning:

2 teaspoon Nutritional Yeast

1 teaspoon turmeric

1/2 teaspoon garlic granules

1/2 teaspoon black salt or sea salt

Sprinkle of vegan cheese


Spicy Crema:

3 tablespoon creme fraiche or Greek style yogurt

Splash of your favourite hot sauce

Squeeze of 1/2 Lime

Salt and Pepper to Taste


Recipe.

Peel and chop plantain. In a shallow frying pan add enough olive oil to coat the bottom. Fry plantain on a medium-high heat till golden brown. Set aside on kitchen towel to remove access oil.


Remove access oil and in the same pan add a tablespoon of butter. Once melted add one chopped spring onion and fry for 30secs. Add silken tofu and break up with spatula. Cook for a minute. Add Scramble seasoning and continue to fry stirring for another minute. Add vegan cheese and allow to melt.


Mix creme fraiche, lime, hot sauce, garlic and salt and pepper to taste in a bowl.


Toast taco shells in lightly oiled frying pan. Load up tacos with plantain, Scramble and then Crema. Garnish with extra spring onion!
